Sparkling Wine & Elderflower Jelly

A lovely and light dessert with a touch of sparkle, this wine & elderflower jelly is perfect for celebrations and garden parties.

 

INGREDIENTS

5 gelatine leaves

1 bottle sparkling wine 

75g caster sugar 

2 tbsp elderflower cordial 

 

METHOD

Soak the gelatine in cold water until softened. Squeeze the excess water from the sheets.

Put caster sugar, 100ml water, and ¼ of the wine in a pan. Heat gently until the sugar has dissolved.

Stir the gelatine sheets into the liquid.

Strain into a bowl and leave to cool before adding the rest of the wine and cordial.

Divide the jelly between 6 champagne glasses.

Chill for about 4 hours (or overnight) to set.

Enjoy with some fresh raspberries.
