English Scones

These English scones are delicious served warm with strawberry jam, clotted cream and a nice cup of tea.



Makes 10-12 scones.


250g self-raising flour

½ tsp baking powder

50g butter

2 tbsp caster sugar

75g sultanas or mixed dried fruit

150ml slightly warmed milk




  1. Preheat the oven to 220°C/gas mark 7 and grease a baking sheet.
  2. Sift the flour and baking powder into a bowl.
  3. Rub in the butter until the mixture resembles breadcrumbs.
  4. Mix in the sugar and sultanas or dried fruit.
  5. Add the milk a little at a time while mixing to give a fairly soft dough.
  6. Turn out onto a lightly floured surface. Bring gently together, trying not to overwork the dough.
  7. Pat the dough out to an approximate 3cm thickness and, using a cookie cutter, cut out round pieces. Place these onto the baking sheet.
  8. Brush with milk for a golden finish and bake in the oven for 10 minutes.
  9. Cool on a wire rack.
